We sell our beef by either the quarter or the half (side). Each quarter is approximately 90 pounds of beef for your freezer, and each half is approximately 180 pounds for your freezer. We process younger animals rather than yearlings. This ensures very tender beef and smaller steaks and roasts. We find these smaller portions to be better for our health and weight as well as more logical for smaller families.

How much freezer space will you need? Each cubic foot of freezer space can hold about 35 pounds of food, so you would need at least two cubic feet for a quarter beef. We recommend a free-standing freezer rather than the one attached to your refrigerator.

Our beef is priced at "freezer weight" or what you will actually be putting into your freezer. These prices can be compared directly to what you see in your supermarket for either "Natural beef" or grass-fed (pastured) beef.

Price:

Side of beef: $6 per pound freezer weight
Quarter of beef: $6 per pound
(includes some steaks from hind quarter and roasts from front quarter)
Front Quarter: $5 per pound
Hind Quarter: $7 per pound
Ground Beef:
(85% Lean)
$5 per pound

(95% Lean) $5.50 per pound
Ground Beef Patties: (85% or 95%, 1/2 pound or 1/4 pound) $6 per pound

Please note that most of the steaks come from the hind quarter while the front quarter provides the majority of roasts. When you order a "quarter" beef, we divide the portions between steaks and roasts.

Ribeye $14 per pound
NY Strip-$12 per pound
T-bone- $10 per pound
Sirloin- $8 per pound
Porter house - $7 per pound
Skirt Steak (fajita meat) $6 per pound

Misc.:
Round cuts $6 per pound
All roasts $6 per pound
Brisket $6 per pound
Ribs $5 per pound

Each side of beef will provide approximately:
14 pounds of Sirloin steak,
8 pounds of T-bone and club steaks,
14 pounds of Round steak
5 pounds of brisket
5 pound of flank steak
40 pounds of roasts (chuck, boneless chuck, rib and rump)
40 pounds of ground beef
8 pounds of Rib steak
6 pounds of Country-style ribs
